And once again the seas are abundant! Crab, lobster, skate, gurnard, huss, mullet, cuttlefish, turbot, all passed through our kitchen in the last fortnight. The gurnard absorbs flavours beautiful, working well with tomato, thyme olive and anchovy. The local crab meat we serve devilled on bruschetta, and also as a rich bisque. Tandoori halloumi is a dish that has crept in through the back door to establish itself somewhat as a signature vegetarian dish, craved by veggies and meat eaters alike!
